Oh hell no. If Fincher is going to do sci-fi, it's going to be something along the lines of Rendezvous with Rama, or a movie set in the Halo universe. He's shown an interest in the series, even producing a commercial for Halo 4. I couldn't see him working on anything Star Wars related, and his movies have a nice hard R streak. He isn't appropriate at all for that franchise. I would go as far to say that he limits himself to his niche, for better or worse. He knows what he does well, and he stays within those confines. I'm guessing if he was offered this, he would decline.
As much as I love Fincher's stuff, I recognize his lack of versatility, he ain't no Ridley Scott. Black Hawk Down to Matchstick Men to Kingdom of Heaven. That Ridley is a hard one to nail down.
EDIT: Not to say if he would do it, he wouldn't do a good job at it, because he would. He would make Irvin Kershner's corpse smirk.
